To Justin Lee Jin Tat

You know what, destiny brings two over gan cheong people together. I already lost count of how many timeSSSSS we had discussion on our practical exam; from anna potatoes to fish florentine, from caesar salad to veloute sauce. We talk about how to improvise the recipe, how to plate...I really enjoy the process. I feel like we are just a team. For me the preparation for this exam is worth more than my exam itself. Can you imagine we had bugged how many lecturers on fish florentine: Mr Paul, Mr Gerhard, Mr Lee, Mr Yahaya... I guess my groupmates had too much info about fish florentine as I had been asking during all classes.
I really feel grateful for what you had done for me and for yourself as well. It is very good of you for not being selfish and mind you own business. Appreciated for everything.

Today I had my first final exam, the only practical exam. My classmates and I were so nervous that we had difficulties in falling asleep few days before today.
I thought it was a good signal that we are using champion instead of windows. But I was told that there is no fish stock and others are using chicken stock for fish dishes. For me I am not going to use the chicken stock as I can prepare the fish stock (Luckily I paid attention in Mr G class).
Due to the lack of cooking, I am very nervous. Actually my dish is quite easy but then I was too nervous. Although I had passed, I am so unsatisfied with what I had done.
I swear to myself, I won't let this happen again. If I were in a competition, I am making fun of myself. Please vien, do not let it happen again.

Sometimes I really doubt what I actually want. Since I had my driving license, or even before that I had always bug my dad to get me a car.
There was one accident which made me never drive again. I should say my parent forbid me to drive. It was a bad accident which caused my ford to change one of the door.
I am living outside all this while. When I was about to move back to my own house, my dad suddenly decided to buy me a car. YOU KNOW WHAT THAT IS MY VERY OWN CAR. Oh my god... I so delighted that my wish is fulfilled. But lets not forget about my driving skill. I had been keeping my licence for two years. How am I going to face the hectic road?
There is another thing. I am getting a second hand car. My heart keep on asking why must a second hand car. On the other hand my brain is rationally told me that I deserve a second hand car. No point I get a new car when I am about to bang it somewhere.
My friends all so excited when I told them about it. And yet the future is too far to be seen. As what my mum and uncle said, do not expect thing to be so simple. I believe everyone understand that but if you expect everything to be complicated life is dull. I believe what I believe and let the life lead my life.

Finally tomorrow is the day-the day to hand up pdp portfolio. There is two feeling inside me. One part of me feel relief that finally I am out of this stress. While another part of me feel so stressed that I still have a bit more to go.
Apart of myself, everyone else is also very stress.

Today I am very emo, rili emo. So stress about pdp assignment and gardemanger notes. Both need to be completed before wednesday. Huh... I am exhausted.
Thanks ken for helping me with my personal statement.
Something happened today and I feel very unhappy. I wish uncle is here. As normal he is not there for me. I start to think a lot of things. I know I am too silly to think that because I would not let go of him. I want him, I need him, I love him. How can I change the situation now?
At least from this incident, I realised that there are many people care for me.

First of all, I say thanks to Uncle Chan for his cake. A big suprise for me. So touch.
After f&b class we went to sing k. This time a bit special as it is our last outing before our final exam and today we were joined by Auntie Pui Yee, Uncle Justin and Uncle Teo.

3 hours of sing k is just too less and not enough umph... but anyhow we had a full attendance. haha... Finally a complete group pic.
Before our french class, we had some fun taking pic outside the library. Maybe we are too obssesed. We did not notice that there were a lot of people looking and laughed at us. Embrassing but fun. Below is the pic I like most:

Unexpected things happen all the time. Our plan for today is so good. Reach Meldy's house around 10-11am and prepare our lunch till 1pm. Then we will go for movie.
But then Uncle Chan suddenly not joining us. So it will be only Johnson and I. W reached her house around 11 as planned. While waiting for the lamb to defrost, we had some discussion with some coffee and ensaimada. Do you want some ensaimada too?

We started our gan cheong kitchen around 12.30pm and it ended around 5pm. Everything was in a mess with the lack of space and equipments. We did not have enough bowls, pots etc... But I guess during my exam time the situation will be more or less the same.

The egg and chowder was nice. The lamb, chicken and fish was okay but wonder why all the sauce was not okay. Then we were stuck with our plating. I guess we were too tired. I mean mentally tired with things which was not coming out the way we want it to be. After the plating we didn't eat it although we forgotten our lunch.

Here is the climax. I was cleaning the plates, spoons etc. Out of sudden I accidentally cut my finger with a paring knife. Oh my goodness...Blood was coming out. I am panicked. It is my first cut. As Johnson and Meldy is covering my wound with plaster my vision turned black and I felt want to vomit. I tried to make my way to the toilet and opps...I fainted. I hate it. The previous time I fainted after I got some blood sample for blood test.
Meldy and Johnson were so nervous and scared. Even after I regained concious, their face expression showed that they were scared off. I am very sorry Meldy and Johnson. I owe you guys this time. Luckily Uncle Chan did not come. If not he will be waiting for hours of preparation which ended up with a mess.
By the way there is two guys just moved into the room beside mine. Feel so weird and uncomfortable. Hope the feeling fade away soon. Terrible, horrible, vegetable....

pi-pu pi-pu... A message from Teo asking me why today I am so late today. Oh my goodness... I am still lying on the bed while I suppose to be on my way to college. It is weird because I had set 3 alarm alerts whereby I used to wake by 1. And I slept at 11pm yesterday.
Today happened to be just like last time. Everyone is bugging the recipe founder on how the dish should be done. By the way, we are also first time doing this recipe. When we are asked about this and that, we are only answering using our instincts. Why don't you try use yours? Be confident enough to do what you think is right and change it if you think it is necessary. Later or sooner you will be one of the world's greatest chef right?
Come back to the gan cheong part... Today we have 2 starters and 2 main courses. Everything turned out as planned. I am very happy that the recipes work well. This the best thing happened to me in a whole down-week.

The gan cheong-ness does not end here. We got a lucky draw to determine our final practical exam question. I team up with Johnson and Meldy. So 3 of us are going to prepare 3 starters and 3 main courses in 3 hours. These are our questions:
VIVIEN'S:
  • Caesar salad
  • Fish Florentine
  • Anna Potatoes
  • Vichy carrots and sauteed french beans

MELDY'S:

  • Seafood chowder
  • Roasted chicken with orange sauce
  • Mashed potatoes
  • Vichy carrots and sauteed french beans

JOHNSON'S:

  • Scotch egg
  • Rack of lamb with rosemary and glaze shallot sauce
  • Mashed sweet potatoes
  • Carrots, broccoli and red capsicum

Meldy's and my questions are still okay. Just that we all hate the unfrenched rack of lamb. Anyway we are going to practise at Meldy's place on Thurs. Hope everything turns out well. God bless me. Haha...
